My butcher let me in his huge freezer this week. We discussed the dead animals hanging there and ooohhhheed and aaahhheed at the aging rib roast that, after 17 days of hanging, had gained some character. Can't beat a rib roast of grass-fed Aberdeen Angus from Scotland - really . . . it doesn't get much better than that!

I love meat. Some of my happiest memories are connected to eating meat with my friends and family. I even have a huge book . . . called "The River Cottage Meat Book" and am enjoying the author's appeal to the Scriptures for a better meat eating philosophy. I am on a cruelty-free diet this year. I like to know the history of the animals we eat. This is why none of us are eating any chicken products from fast food places. I have said this before. But I what i have not said is that we are buying better meat and eating less of it. In fact, a good policy would be to pay twice as much money for better meat and only eat half as much.
